2-Ingredient Banana Cookies

Not sure what to do with your overripe bananas? You can whip these crispy on the outside with a soft and chewy inside cookies up in minutes. They are sure to become a family favourite, these delicious banana cookies are impossible to resist.
Ingredients
- 2 ripe bananas, mashed
- 1¾ cups quick or rolled oats
Method
- Preheat oven to 180oC (350oF). and line a baking tray with baking paper.
- In a medium bowl, combine the ingredients and mix together.
- Scoop tablespoons of mixture and form into balls. Place on the baking tray and flatten slightly.
- Bake for 10 to 15 minutes and allow to cool on the baking tray and then move to a wire rack to cool completely.
- Store in an airtight container for 1 -2 days. To freeze, once cool, put the bakig tray in the freezer, once frozen, transfer to airtight container.
