Almond & Blueberry Pancakes

Support Kid's Health - Delicious Pancakes 

These almond flour pancakes are fluffy, light and filled with delicious nutty flavour. They're an easy, protein rich breakfast that helps to boost brain power!

Ingredients

  • 1 cup almond meal
  • 2 free-range eggs, whisked
  • 3 tablespoons coconut milk (or milk of choice)
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 2 tablespoons butter or olive oil

Method

  1. Blitz all the ingredients either in a food processor or using a stick blender until smooth.
  2. Heat a frying pan over medium heat and brush the pan with butter or oil. When the pan is hot, add ¼ cup of the mixture and cook until bubbles appear on top of the pancake. Using a spatula flip the pancake and cook the side until golden.
  3. Serve with fresh blueberries or fruit of choice and a drizzle of honey.
