Almond & Blueberry Pancakes

These almond flour pancakes are fluffy, light and filled with delicious nutty flavour. They're an easy, protein rich breakfast that helps to boost brain power!
Ingredients
- 1 cup almond meal
- 2 free-range eggs, whisked
- 3 tablespoons coconut milk (or milk of choice)
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 2 tablespoons butter or olive oil
Method
- Blitz all the ingredients either in a food processor or using a stick blender until smooth.
- Heat a frying pan over medium heat and brush the pan with butter or oil. When the pan is hot, add ¼ cup of the mixture and cook until bubbles appear on top of the pancake. Using a spatula flip the pancake and cook the side until golden.
- Serve with fresh blueberries or fruit of choice and a drizzle of honey.
