Ingredients
- 3 overripe bananas, mashed
- 3 free-range eggs, lightly whisked
- 2 cups almond meal
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- Additional banana for garnish
Method
- Preheat oven to 180°C (350°F). Line loaf tin with baking paper.
- In a large bowl, add all the ingredients and mix together thoroughly.
- Pour the batter into the prepared loaf tin and top with sliced banana.
- Bake for 45 – 55 minutes or until a skewer comes out clean.
- Allow to cool before cutting.
