Banana Spelt Bread

Perfect as a satisfying and delicious snack.  This banana spelt bread is everything you imagined – it’s soft, moist and flavoursome and it won’t disappoint.  Quick and easy to make, you can customise it with add-ins such as chocolate chips or nuts. 

Ingredients

450g very ripe bananas, mashed

½ banana for topping

2 free-range eggs

1½ cups spelt flour

2 teaspoons ground cinnamon

1 teaspoon vanilla extract

2 teaspoons baking powder

1¾ cups desiccated coconut

⅓ cup honey or maple syrup

½ cup extra virgin olive oil

1 pinch salt 

Method

  1. 1. Preheat oven to 160oC (320oF). Grease a loaf tin and line with baking paper.
  2. In a medium bowl, combine mashed banana, eggs, olive oil, honey and vanilla essence.
  3. Then add the dry ingredient - cinnamon, spelt flour, baking powder, coconut and salt and mix until well combined.
  4. Pour the mixture into the prepared tin and bake for 1 hour or until cooked through and a skewer inserted into the middle comes out clean.
  5. Let the loaf cool slightly before removing from the pan, then allow to cool completely on the counter before slicing
  6. Store in an air tight container for up to 5 days.
