I am totally and utterly in love with this coconut and raspberry cake and you will be too. It combines the natural sweetness of bananas with the wonderful flavours of raspberries – a match made in heaven. One of the best qualities about this cake is it’s so easy to make with simple ingredients.
Ingredients
- 6 eggs
4 cups desiccated coconut
2 ripe bananas
1 teaspoon baking powder
1 teaspoon vanilla essence
1/4 cup maple syrup
2 cups frozen raspberries
Method
- Preheat oven to 180°C and line a loaf tin with baking paper.
- Beat eggs, maple syrup and vanilla for a few mines
- Add mashed banana and stir through
- Fold in coconut then raspberries and pour into tin.
- You can top with an extra banana sliced
- And bake for 35 to 45 mins or cooked through.

- Cook time: 20 minutes
